It used to be the case that we Brits headed off to France or Italy for fantastic culinary experiences, but these days UK holidays can offer as many top class dining opportunities as anywhere on the continent.

Wales is the perfect example of an area full of restaurants boasting the freshest ingredients and achieving some of the biggest awards for food around. So if a trip away is not complete for you without a few Michelin stars and AA rosettes then look no further than Wales.

North Wales

If you want to know how seriously they take the food at Tyddyn Llan in Llandrillo then think about how it is described on their website - a fine restaurant with rooms in scenic North Wales. Instead of calling themselves a hotel with dining opportunities, everything is secondary to the food.

And if this has not convinced you then perhaps the Michelin star that chef Bryan Webb has earned will. His food is created with great skill and no small amount of innovation, adding up to delicious dishes.

With the highest rating of any establishment in Wales in the Good Food Guide you are duty bound as a self-respecting foodie to give it a try. We recommend the smoked salmon terrine to start, followed by Goosnargh duck breast with goats' cheese gnocchi, apples and celeriac to follow.

Mid-Wales

One of the best things about sampling fine food on your holidays is to get a flavour of the place where you are staying and this is certainly achieved at Ynyshir Hall in Machynlleth. Here chef Paul Croasdale creates dishes that are distinctively Welsh.

The lobster comes from Cardigan Bay, the shrimp from Aberystwyth and the wild garlic from the beautiful countryside surrounding the property. But if you consider a meal not to be complete without the meat then here you will find organic pork, Welsh black beef and free range chicken. Even the bacon served at breakfast is hand-cut.

Try the roast squab pigeon to start and then sample the Jerusalem artichokes served with clams for an exquisite dinner. Be sure to leave enough space for the pre-dessert and dessert itself. Although cheese lovers will be in ecstasy if they order the selection here, as it is sourced in Wales, England and France.

South Wales

Despite publicising the fact that they are not trying to win any prizes for innovative cooking, the chefs at Y Polyn in Capel Dewi, Carmarthenshire have done just that. Last year this small country pub turned gastro experience was the AA Welsh restaurant of the year.

While Y Polyn prides itself on having no table cloths and the waiting staff wear jeans, do not be fooled by the casual feel of this establishment. It has been carefully constructed and should not be confused for sloppiness. This noisy, bustling place deserves its accolades.

Sue Manson heads up the kitchen team, creating tasty offerings such as chicken liver parfait as a starter and carbonnade of Welsh black beef in Otley Ale. And if you can't fit in a dessert then you can round off your meal with some homemade fudge and a coffee.
